SWEET CARROT WINE - 5 Litres
Ingredients
2.7 Kg (6 lbs) Carrots ( Skinned, topped & tailed)
3 L. White Grape Juice
1.0 Kg. Demerara Sugar
0.350 Kg White Sugar
2 teasp. Citric Acid
1 Tablet Tannin
1 teasp. each of Bentonite, & Pectolase
Pinch of Black Pepper
Yeast :- Gervin No. 3 or Form. 67.
Method
Chop carrots into small cubes. Place in pot with 1.7 L. (3 pints) water and
simmer for 15 mins., or until carrots are soft. Strain off the liquid and
discard the carrot pulp. Add 3 litres grape juice and 350 gm White sugar to the
carrot liquor. Add acid, bentonite, pectolase, tannin and pepper. Stir well to
dissolve the sugar. Prepare the yeast as per instuctions and add. Check the
gravity as fermentation proceeds and feed with the rest of the Demerara sugar in
250 gm increments as the gravity nears 1.00.
