French Onion Soup

Ingredients

6 Onions

2 ozs butter

2 Pints Good Beef Stock

 

Method

Chop the onions into ½" squares or ½" slices and fry in the oil till golden and caramelised. Add stock and season to taste. Serve with bread or cheese croutons.

 

Stilton and Onion Soup

Ingredients

 

2 large Onions

2 ozs Butter

2 heaped teaspoons cornflour

1 Pint of milk

1½ Pints Chicken Stock

8 Ozs Crumbled Stilton Cheese

Salt & Pepper to taste.

 

Chop onions and fry in butter. Add stock and cook onions till soft. Take pan off the heat and add slaked cornflour and milk. Bring to the boil, and cook for 1 minute. Then add the crumbled cheese and serve immediately with parsley, and or a swirl of double cream. Do not cook the soup after the cheese has been added.
