Nettle Soup
Ingredients
1 lb. Potatoes
8 oz. Young nettle tips (100 mm)
2 oz. Carrots
2 oz. Butter
3 Oxo Veg. stock cubes
1.5 pints Water
Pepper (to taste)
Method
Peel potatoes , carrots and cut into slices. Wash the nettles
in cold water and chop coarsely. Boil potatoes and carrots for 10 mins. in salted water,
then drain. Melt the butter in a suitable pan, add the nettles and gently simmer
for 5 mins.. Add the stock cubes and 1.5 pints boiling water. Bring to the boil
and add the potatoes and carrots. Gently simmer for a further 10 mins. Season to taste. Add
salt at your peril! The stock cubes contain sufficient salt!!
Allow to cool, then puree in a blender.
For total authenticity serve with halved or sliced
hard-boiled eggs.
