MUSHROOM SOUP

Ingredients

8 ozs Mushrooms

1 oz Flour

1 oz Butter

1˝ Pints Chicken Stock

1 Onion

Method :-

Chop or slice mushrooms and onion.  Sauté in butter till soft. Make a roux with flour, add stock, bring to boil and simmer for about ˝ hour. Serve with a swirl of cream or creme fraiche.

 

Alternative method. :-

 

Fry chopped mushrooms and onions in butter. Add stock, thicken with cornflour or dried instant potato instead of the flour.
