Garlic Soup

 

Ingredients (approx.)

7 Bulbs of Garlic

2 Medium onions

1 Leek

Handful of nuts (Cashew, Pine)

2 Pints of veg stock.

Large carton of cream.

Mixed Herbs

Method

Roast the bulbs of garlic in a hot oven for about 40 mins, once cooled peel.

Fry the onions, herbs, and leek until soft.

Add the nuts and fry for a bit more.

Add the roasted Garlic and the stock and simmer for 20 mins.

Blitz in a blender until smoothish.

Add the cream and simmer for 5 mins.
