Courgette and Tomato Soup.
Ingredients
1oz butter
1 onion chopped
12oz courgette coarsely grated
1 clove garlic crushed
20 fl oz vegetable stock
14oz can tomatoes, chopped
Mixed herbs or basil – optional
Salt and pepper
Method
Melt butter, add onion and cook until soft.
Add courgettes and garlic, and cook 4-5
minutes.
Add stock and tomatoes with their juice and
season to taste.
Bring to boil and simmer for 15 minutes.
Add herbs before serving.
