Bramble Tip Wine
Ingredients
4 Litres/7 pints young bramble tips (50mm/ 2")
450 gm/1lb raisins
3 Litres/5 pints boiling water
1.25 Litres/2.25 pints of syrup - Gravity 300
1 teasp. citric acid
1 yeast nutrient tablet
Bordeaux yeast
Method
Chop bramble tips and boil for 30 mins. Chop the raisins,
put in a plastic pail and strain the bramble liquor on top. Stir well.
Add the syrup, yeast nutrient & citric acid. When cool
add the yeast starter and stir well. Cover and ferment for 4 days in a
warm place, stirring well each day. Strain off raisins and transfer to a demijohn, top up to 1 gall.
level, fit airlock and ferment till dry.
P.S. Although good to drink
after 6 months, it is SUPERB after 1 year.
